The internal temperature of the meat determines not only its texture and flavor but also whether it's safe to consume. Undercooked meat can harbor harmful bacteria, while overcooked meat can be dry and tough. Beef and Lamb


For beef and lamb, the ideal internal temperatures depend on your preferred level of doneness:
- Rare: 50-54°C (122-129°F)
- Medium Rare: 55-57°C (131-135°F)
- Medium: 58-65°C (136-149°F)
- Well Done: 70°C (158°F) and above

Keep in mind that the temperature will continue to rise slightly after removing the meat from the heat source, a phenomenon known as "carryover cooking." For larger cuts like roasts, expect a 2-4°C increase during resting.

Pork


When it comes to pork, it's crucial to cook it thoroughly to eliminate any risk of foodborne illness. The recommended minimum internal temperature for pork is 70°C (158°F). This applies to all cuts, including chops, roasts, and ground pork.

Poultry


Poultry, such as chicken and turkey, should always be cooked to an internal temperature of at least 74°C (165°F) to ensure safety. Check the temperature in the thickest part of the thigh, avoiding the bone. For whole birds, also check the temperature in the thickest part of the breast.

Fish


Fish is more delicate than meat and requires lower cooking temperatures. Here are some guidelines:
- Whole fish: 56°C (133°F)
- Salmon: 52-56°C (126-133°F)
- Tuna (for a rare center): 40-45°C (104-113°F)
- Cod/Haddock: 54-56°C (129-133°F)

Game Meats


When cooking game meats like venison, the ideal internal temperature range is 56-70°C (133-158°F). The exception is wild boar, which should be cooked to at least 70°C (158°F) like domestic pork.

Tips for Success


- Always use a calibrated meat thermometer inserted into the thickest part of the meat, away from bones or fat.
- Let your meat come to room temperature before cooking to ensure more even cooking.
- Allow cooked meat to rest for a few minutes before cutting to let the juices redistribute.
- Experiment with different cooking methods (roasting, grilling, braising) to find your preferred flavors and textures.
